Founded by Shiro Kashiba in 1995, it offers set-course dining, not à la carte ordering. All diners must order the course menu for their seating type, with different menus for tables and the sushi bar. Sushi platters are available for takeout only. Some dietary restrictions can be accommodated, but there is no vegetarian dine-in offering.
