Birch on Milwaukee's East Side was opened by Kyle and Meghan Knall in 2021. Chef Kyle Knall's seasonal Midwestern menu is cooked over an open wood-fired hearth. The kitchen works with Stone Bank Farm and West Allis Farmers Market vendors, using cellared produce in colder months, and the wine list emphasizes small producers.
